我是大廳領(lǐng)班趙楠,轉(zhuǎn)眼間入職百亨商務(wù)酒店工作已一年多了,七月份根據(jù)酒店領(lǐng)導(dǎo)的工作安排,任職大廳領(lǐng)班,主要負(fù)責(zé)餐廳大廳的日常工作和管理,辭舊迎新,回顧201*年度工作情況作總結(jié)匯報,并就201*年的工作展望作簡要概述。

一、在服務(wù)方面:1、大廳共計十五個臺位,分為一、二、三、四區(qū),平均每區(qū)的服務(wù)員盯四張臺。共七名員工,每天安排上早餐一的名,值班的一名,機(jī)動幫忙的一名,其余的保持正常的人員配置。

1、禮節(jié)禮貌培訓(xùn),要求員工見到客人要禮貌用語,有問好聲,把禮節(jié)禮貌應(yīng)用到工作之中,員工之間相互監(jiān)督,共同進(jìn)步。

2、班前堅持對儀容儀表的的檢查,儀容儀表不合格者要求整理合格后方可上班,上班期間發(fā)現(xiàn)儀容儀表問題立即指正,檢查對客禮儀禮貌的運(yùn)用,讓員工養(yǎng)成一種良好的習(xí)慣。

3、嚴(yán)抓站姿站位和服務(wù)意識,提高服務(wù)效率,針對服務(wù)人員在用餐高峰期的時候進(jìn)行合理的調(diào)配,機(jī)動人員隨時支援較忙的區(qū)域,其他人員各負(fù)其責(zé),明確各自的工作內(nèi)容,進(jìn)行分工合作。

4、提倡效率服務(wù),要求員工只要有客人需要服務(wù)的立即進(jìn)行為客人服務(wù)。5、在服務(wù)質(zhì)量方面加大了管理力度,要求服務(wù)人員每餐勤更換骨碟,多添茶添水,本人也嚴(yán)格要求自己在完成工作安排的同時查看服務(wù)員的服務(wù)情況,增加巡臺的次數(shù),及時補(bǔ)臺,遇到比較重要的客人,我也會協(xié)助服務(wù)員做好餐中的服務(wù)工作,交待好重要事項,及時的送果盤。

6、我認(rèn)為領(lǐng)班的工作是每天都應(yīng)該與員工生活在一起,多溝通交流,不管在上班還是下班都要起到帶頭作用,學(xué)會觀察員工的精神面貌、心理動態(tài)、及時的關(guān)心員工。對犯錯誤的員工根據(jù)酒店制度做出相應(yīng)的處罰,并對其做心理疏導(dǎo)工作。對于表現(xiàn)優(yōu)秀的員工,給予精神和物質(zhì)的表揚(yáng),讓其不斷進(jìn)步。想辦法讓大家的工作熱情都高漲起來。在做管理員期間,我學(xué)會了很多東西,懂得了承擔(dān)責(zé)任,獨立思考問題,掌握了正確的處理客訴的方協(xié),學(xué)會協(xié)調(diào)和安排員工的工作,在帶領(lǐng)員工進(jìn)步的同時,自身也得到了極大的鍛煉。二、在衛(wèi)生方面:

1、在酒店的衛(wèi)生大檢查中,我們大廳出現(xiàn)了很多問題,我也深刻的認(rèn)識到了管理上的漏洞,首先是我對員工的衛(wèi)生要求不高,檢查力度不夠,其次是帶頭引導(dǎo)不夠,我重新對以前的衛(wèi)生標(biāo)準(zhǔn)進(jìn)行了學(xué)習(xí),制定了詳細(xì)的周計劃衛(wèi)生跟月計劃衛(wèi)生,各衛(wèi)生區(qū)域責(zé)任人明確到位,對不合格的及時進(jìn)行整改,保證酒店的復(fù)查合格,把嚴(yán)格的衛(wèi)生標(biāo)準(zhǔn)貫徹到日常工作中。我們會定期進(jìn)行徹底的清理,保持一個良好的衛(wèi)生狀況,給客人一個舒適的用餐環(huán)境。

2、節(jié)能減耗方面,我們一直強(qiáng)調(diào)低值易耗品的回收,并跟蹤落實?偷介_空調(diào),客走第一時間關(guān)燈、關(guān)空調(diào)。三、我工作中存在一些問題:

1、容易將個人情緒帶到工作中,高興時熱情周到,不高興時有所怠慢,以后在工作中盡可能克服這種情況,在思想中真正樹起:顧客就是上帝的意識。

2、在工作的過程中不夠細(xì)節(jié)化,工作安排不合理,工作較多的情況下,主次不是很分明。3、各區(qū)域之間欠缺溝通,常常是出了事以后才發(fā)現(xiàn)問題的存在。4、班前例會互動環(huán)節(jié)不多,減少了生氣和活力5、大廳公共區(qū)域的清潔衛(wèi)生有待進(jìn)一步的提高。6、大廳員工的服務(wù)規(guī)范及技巧需要進(jìn)一步加強(qiáng)。

7、交接班時由于考慮不周,認(rèn)為小問題不須特意交接清楚,致使這樣那樣的問題發(fā)生,小事易造成大錯,今后一定嚴(yán)加防范,以免出錯。四、201*年的展望,我的計劃是:1、認(rèn)真做好每一天的每一項工作。

2、細(xì)化服務(wù)措施,提高客人的滿意度。3、加強(qiáng)教育培訓(xùn),強(qiáng)化員工的素質(zhì)。4、提高服務(wù)效率,做好日常衛(wèi)生。

5、將酒店發(fā)生的案例整理好,仔細(xì)總結(jié)分析,然后跟員工一起學(xué)習(xí),分享服務(wù)經(jīng)驗,激發(fā)思想,減少客人投訴的幾率。

6、聽從主管、經(jīng)理的工作安排,并認(rèn)真做好各項工作,及時匯報。

7、注重員工的成長,時刻關(guān)注員工的心態(tài),要求保持良好的工作狀態(tài),不定期組織員工進(jìn)行學(xué)習(xí),發(fā)現(xiàn)不足之處及時彌補(bǔ),每月定期找員工談心做思想工作,了解他們近期的工作情況從中發(fā)現(xiàn)問題解決問題。
