一、履行職責(zé)情況
主要是協(xié)助餐廳經(jīng)理做好前廳的日常內(nèi)部管理事務(wù),后幾個(gè)月(6、7、8、9月)因工作的需要及領(lǐng)導(dǎo)的信任和自身發(fā)展的需要,主要負(fù)責(zé)酒店的營(yíng)銷(xiāo)工作。回顧這幾個(gè)月來(lái)的工作,主要有以下幾個(gè)方面:
1、抓學(xué)習(xí)教育,激勵(lì)奮發(fā)向上
從任職以后,我在君御酒店分管內(nèi)部管理工作,了解君御酒店員工多數(shù)來(lái)于河北、安徽、湖南等不同地區(qū),文化水平和綜合素質(zhì)有很大差異,業(yè)務(wù)水平及服務(wù)意識(shí)不高,針對(duì)此種狀況,我把自己所看到的不足一一列出病單,進(jìn)行全面性的培訓(xùn)和現(xiàn)場(chǎng)督導(dǎo)。糾正錯(cuò)誤的管理方法,進(jìn)行理論的講解及實(shí)踐的練習(xí)操作。從賓客一進(jìn)店的規(guī)范禮貌用語(yǔ)、微笑服務(wù)以及職業(yè)道德的觀念、菜品搭配,規(guī)范八大技能實(shí)踐操作程序,通過(guò)學(xué)習(xí),使員工加強(qiáng)服務(wù)質(zhì)量,提高業(yè)務(wù)服務(wù)水平,當(dāng)賓客進(jìn)店有迎聲,能主動(dòng)、熱情地上前服務(wù),介紹酒店風(fēng)味菜,當(dāng)賓客點(diǎn)起煙,服務(wù)員應(yīng)及時(shí)呈上煙缸等。在四月份時(shí),舉行了技能實(shí)操比賽,服務(wù)員潭麗燕獲得了技能比賽第一名的好成績(jī)。其他服務(wù)員通過(guò)活動(dòng)比賽,養(yǎng)成了一個(gè)好的習(xí)慣,不懂就問(wèn),不懂就學(xué),相互求教,也學(xué)到了很多知識(shí),精神風(fēng)貌也越來(lái)越好,提高了工作效率,不足的是操作細(xì)節(jié)還有待改善。2、抓管理建章立制
前期,餐廳很多工作存在問(wèn)題,主要的毛病存在于沒(méi)有規(guī)范的制度,員工不明確制度,一些制度沒(méi)有具體的負(fù)責(zé)人進(jìn)行落實(shí)等。通過(guò)質(zhì)檢部領(lǐng)導(dǎo)的指導(dǎo),我對(duì)羅列出衛(wèi)生工作制度上墻、音響的開(kāi)關(guān)時(shí)間及負(fù)責(zé)人以及各崗位的服務(wù)流程、個(gè)人衛(wèi)生要求標(biāo)準(zhǔn)、收尾工作的注意事項(xiàng),每天進(jìn)行現(xiàn)場(chǎng)督導(dǎo)檢查,對(duì)員工加強(qiáng)工作意識(shí),明確工作責(zé)任有很大幫助。后期電話費(fèi)用高,配合高層經(jīng)理配置電話機(jī)盒,規(guī)定下班時(shí)間將電話鎖上,以及任何服務(wù)員一律不允許打市話等,杜絕了下班時(shí)間打市話的現(xiàn)象。3、抓內(nèi)部客戶(hù)的溝通
真誠(chéng)地與客戶(hù)溝通,聽(tīng)取他們的寶貴意見(jiàn),不斷改進(jìn)并協(xié)調(diào),及時(shí)將客戶(hù)反饋的信息反饋給廚房,如,有時(shí)客戶(hù)反饋“阿美小炒肉”分量不足,“沸騰魚(yú)”不夠香等等,通過(guò)客戶(hù)的真誠(chéng)反饋,再加上我們認(rèn)真的討論、修改,不斷地提高菜肴的質(zhì)量,令顧客滿(mǎn)意。4、抓宴席的接待及管理宣傳工作金秋十月是婚宴的黃金季節(jié),制定婚宴方案,向周邊的單位發(fā)放宣傳單進(jìn)行走訪工作,目前,我承接了10月份的五場(chǎng)婚宴工作,向前來(lái)的賓客介紹餐廳的各種優(yōu)勢(shì),對(duì)婚慶公司進(jìn)行電話溝通,對(duì)外宣傳酒店規(guī)模等,計(jì)劃性地對(duì)宴席接待做好充分的準(zhǔn)備工作。5、抓團(tuán)隊(duì)用餐
利用每周六、日、一與30多家旅行團(tuán)電話溝通及接待團(tuán)餐,目前前來(lái)旅行團(tuán)消費(fèi)最多的是旅行社、旅行社、國(guó)旅、旅行社等,通過(guò)接待團(tuán)餐,第一為餐廳增添了人氣,第二為廚房減少了成本費(fèi)用。并利用接待團(tuán)餐的機(jī)會(huì),認(rèn)真咨詢(xún)反饋,做好信息的反饋統(tǒng)計(jì)工作。二、未來(lái)努力方向
在工作中深感自己的不足,今后我將朝這幾個(gè)方面努力:
1、不斷學(xué)習(xí),提高自己,加強(qiáng)銷(xiāo)售的業(yè)務(wù)知識(shí)及各方面的知識(shí)學(xué)習(xí)。2、認(rèn)真做好本崗位工作的同時(shí),不斷開(kāi)發(fā)新的客戶(hù)群體。3、做好內(nèi)部客戶(hù)的維護(hù)及溝通工作。4、有計(jì)劃性地安排好營(yíng)銷(xiāo)工作。
5、做好客戶(hù)統(tǒng)計(jì)資料,不斷地加強(qiáng)聯(lián)系,做好客戶(hù)投訴處理工作及反饋信息工作。6、密切配合酒店銷(xiāo)售部接餐及接待服務(wù)。
