一年來,在集團(tuán)的正確領(lǐng)導(dǎo)和親切關(guān)懷下,在全體員工的共同努力下,我中心克服了食品原材料價(jià)格猛漲和用工成本激增的雙重巨大壓力,堅(jiān)持學(xué)生食堂飯菜價(jià)格不上漲,強(qiáng)有力地保障了學(xué)校穩(wěn)定工作,較好地完成了全年的工作任務(wù)。為了在新的一年發(fā)揚(yáng)成績,彌補(bǔ)不足,現(xiàn)將全年工作總結(jié)如下:

一、積極倡導(dǎo)敬業(yè)奉獻(xiàn)精神,狠抓組織紀(jì)律管理,力求管理水平不斷提升

組織紀(jì)律性是餐飲各項(xiàng)工作的基本保證。在中心的積極倡導(dǎo)與要求下,中心職工繼續(xù)發(fā)揚(yáng)了遵守紀(jì)律、無私奉獻(xiàn)的精神,任勞任怨,確保了各項(xiàng)服務(wù)保障工作按時(shí)按質(zhì)完成。

一年來職工積極參加中心組織的各種會議,認(rèn)真領(lǐng)會上級單位的精神和指示并加以貫徹;中心全體正式員工每周末多上一天班,確保了每天一線均有負(fù)責(zé)同志在崗;各餐廳經(jīng)理每天清早提前一小時(shí)到崗,認(rèn)真檢查早餐準(zhǔn)備和銷售情況,中午和晚上開餐時(shí)間也都堅(jiān)守在工作崗位,平均每天在崗時(shí)間超過11個小時(shí);采購組員工不論嚴(yán)寒酷暑,無論雙休日與節(jié)假日,每天早上六、七點(diǎn)上崗,認(rèn)真驗(yàn)收配送餐廳所需物資;微機(jī)房工作人員認(rèn)真遵守倒班制度,從早6:00到晚10:00,從未出現(xiàn)過空崗現(xiàn)象,為學(xué)生餐廳、聚博園和校內(nèi)超市的銷售工作做好了卡機(jī)服務(wù)保障工作。

二、牢固樹立為師生員工服務(wù)的意識,重視服務(wù)對象的需求狀況,力爭提高廣大師生的滿意度

中心積極參加集團(tuán)組織的師生代表座談會,認(rèn)真聽取學(xué)生管理部門和各院系學(xué)生代表的意見和建議,通過加強(qiáng)與服務(wù)對象的溝通交流,進(jìn)一步了解了學(xué)生的需求,及時(shí)對各項(xiàng)工作了進(jìn)行調(diào)整。各餐廳經(jīng)理都有很強(qiáng)的競爭意識,他們想方設(shè)法吸引學(xué)生到自己餐廳來,他們努力在飯菜質(zhì)量、花色品種、就餐環(huán)境和飯菜保溫上下功夫,努力提高學(xué)生就餐率。

一餐廳大膽創(chuàng)新,合理利用閑操作間,優(yōu)化加工炒制和銷售流程,推出精品家常菜窗口,中鍋炒制,隨炒隨上,深受廣大師生歡迎;二餐廳定期更新飯菜品種,營業(yè)額逐步上升,屢創(chuàng)新高;三餐廳一、二樓在天冷之際,推出砂鍋項(xiàng)目,每天就餐師生絡(luò)繹不絕;聚緣閣餐廳加強(qiáng)營銷與服務(wù),充分發(fā)揮自身技術(shù)優(yōu)勢搞好小炒與宴會項(xiàng)目,還配合校團(tuán)委順利完成新年學(xué)生包餃子聯(lián)歡活動的任務(wù);科技餐廳自下半年以來,堅(jiān)持做好夜宵項(xiàng)目,努力為下晚自習(xí)學(xué)生提供安全可口的小吃,受到科技學(xué)院師生的好評。

三、重視采購工作,千方百計(jì)控制進(jìn)貨成本,為餐廳贏利打下良好基礎(chǔ)

采購工作是餐飲中心成本控制的關(guān)鍵一環(huán)。采購到物美價(jià)廉的物資,不僅關(guān)系到餐廳成本高低,更關(guān)系到廣大師生的身體健康,因此,中心極為重視采購驗(yàn)收工作。采購組肩負(fù)著各餐廳除米面油

菜之外的所有物資采購供應(yīng)工作,一年里,采購組職工不辭辛苦、勤轉(zhuǎn)市場、貨比三家、討價(jià)還價(jià),努力降低采購成本;對所采購物資嚴(yán)格驗(yàn)收把關(guān),堅(jiān)決不讓無證不合格產(chǎn)品流入餐廳。在數(shù)次市防疫部門對我中心采購工作的檢查中,均未發(fā)現(xiàn)不合格問題,受到了防疫部門的好評。

四、積極想方設(shè)法,克服成本壓力,實(shí)現(xiàn)了餐廳毛利率不降低下半年以來,受國內(nèi)外多種因素影響,全國包括我市以農(nóng)產(chǎn)品為主的食品原材料價(jià)格上漲迅猛,價(jià)格總水平逐月攀升,與去年同期相比,我中心采購的食品原材料平均漲幅在20%以上,特別是蔬菜價(jià)格平均漲幅在60%以上。這無疑極大地增加了以上述物資為主要原材料的餐廳的運(yùn)行成本壓力,F(xiàn)餐廳所售主食均為保本或虧本供應(yīng)。盡管面對重重困難,各餐廳在經(jīng)理帶領(lǐng)下,在全體員工共同努力下,精打細(xì)算、厲行節(jié)約、推陳出新,提高產(chǎn)品附加值,實(shí)現(xiàn)了相比去年毛利率不降低的好成績。

五、認(rèn)真落實(shí)集團(tuán)“安全生產(chǎn)月”活動,加強(qiáng)安全管理,力爭將隱患消滅在萌芽狀態(tài)

自201*年10月1日至10月31日,中心開展了為期一個月的“安全生產(chǎn)月”活動,集中力量對安全生產(chǎn)工作進(jìn)行了全面檢查,對查出安全生產(chǎn)管理方面和設(shè)備設(shè)施方面的安全隱患,認(rèn)真整改;嚴(yán)格按照河北省教育廳《關(guān)于在全省高等學(xué)校開展乳制品專項(xiàng)治理工作的通知》精神,認(rèn)真排查,嚴(yán)把進(jìn)貨關(guān),徹底杜絕了有害乳制品流入餐廳;積極組織餐廳員工參加學(xué)校組織的消防演習(xí),力爭做到讓每個新招聘員工均參加過演習(xí),懂得基本消防知識,掌握撲救初

期火災(zāi)的能力。

六、積極探索,認(rèn)真論證,為三餐廳改革試點(diǎn)工作精心籌備方案

為滿足廣大師生日益多元化的就餐需求,提高學(xué)生就餐率,集團(tuán)決定以第三餐廳為試點(diǎn),全力推進(jìn)餐飲服務(wù)中心的改革工作。餐飲服務(wù)中心全力配合集團(tuán)此項(xiàng)重點(diǎn)工作,先后到西安、重慶、北京以及本市一些高校做細(xì)致調(diào)研,聯(lián)系專業(yè)餐飲公司來商討合作事宜,聘請專業(yè)施工單位和廚具廠商對餐廳改造進(jìn)行預(yù)算,為最終決策提供切實(shí)依據(jù)。

盡管過去的一年取得了一定的成績,我中心的工作也暴露了一些不足:三餐廳一層炸食間因操作不當(dāng)原因起火,造成了一定的經(jīng)濟(jì)損失和不良影響,這也給我們敲響了警鐘:安全工作必須常抓不懈;針對員工服務(wù)態(tài)度的投訴呈上升趨勢,暴露了員工服務(wù)意識有待加強(qiáng)培訓(xùn)的問題。
