回首201*年,在各位領(lǐng)導(dǎo)、同事的支持下,我以身作則,以高標準、嚴要求,團結(jié)同事來嚴格要求自己。我勤勤懇懇、兢兢業(yè)業(yè),為職工送上了可口飯菜,現(xiàn)將一年來的工作總結(jié)如下:一、保證飯菜質(zhì)量:
菜肴質(zhì)量是食堂得以生存發(fā)展的焦點競爭力。作為一名炊事員,我嚴把質(zhì)量關(guān)。對每道菜都按投料標準及制作程序單來做菜,保證每道菜的色、香、味穩(wěn)定;還詢問并征求員工反饋,并進行總結(jié),在下次飯菜中改進;對于同一菜經(jīng)常想辦法、變花樣,盡最大力量讓職工嘗到新口味。
二、保證飯菜衛(wèi)生:
根據(jù)《食品衛(wèi)生安全法》規(guī)定,抓好食堂的食品衛(wèi)生安全工作,把好食品加工的各個環(huán)節(jié)。把食品原料分類存放,廚房器具也存固定位置;廚房、冷凍箱等原料存放地調(diào)好適當溫度,保證食物新鮮,以確保食品衛(wèi)生安全,防止職工食物中毒。飯前,將食用的飯菜清洗干凈;飯后,對鍋碗瓢盆及時洗刷干凈,擺放整齊,保證廚房干凈衛(wèi)生。三、減少成本浪費:
在確保菜肴質(zhì)量的情況下,最大化使用調(diào)味品及飯菜等,避免浪費。作為多年工作的炊事員,我也總結(jié)出降低成本的新方法。如:庫
1存狀態(tài),堅決"先進先出"原則,把存貨較長的原料盡快用完再用新原料;研究制造無成本菜品,把主菜的剩余原料做成托式菜品,以降低成本,這些不僅能降低食堂費用成本,還能充分利用現(xiàn)有做菜原料,做到最大化利用,避免鋪張浪費。
總之,在這辭舊迎新之際,在項目部領(lǐng)導(dǎo)的關(guān)心下及同事們的支持下,在201*年度,我在菜品創(chuàng)新、菜肴質(zhì)量、成本控制、食堂衛(wèi)生等方面都有了很大的進步都高的成績。當然工作中還存在很多的不足,比如菜的花樣較少。201*年,我會再接再厲、勇于創(chuàng)新,為項目部全體職工帶來衛(wèi)生可口的飯菜而努力!
